Description

Grandma’s Cucumber Salad is a crisp, cool side dish made with thinly sliced cucumbers and onions tossed in a sweet and tangy vinegar dressing. It’s a nostalgic, refreshing salad perfect for summer meals, potlucks, and family dinners.


Ingredients

  • 2 large cucumbers (English or garden), thinly sliced
  • 1 small white or yellow onion, thinly sliced
  • 1/2 cup white vinegar or apple cider vinegar
  • 1/4 cup granulated sugar
  • 1/4 cup water
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh dill, chopped (optional)

Instructions

  1. Wash and thinly slice cucumbers. If using garden cucumbers, peel and deseed if desired.
  2. Thinly slice the onion and place with the cucumbers in a large mixing bowl.
  3. In a separate bowl, whisk together vinegar, sugar, water, salt, and pepper until sugar is fully dissolved.
  4. Pour the dressing over the cucumbers and onions. Toss to coat evenly.
  5. Cover and refrigerate for at least 1 hour to let the flavors meld.
  6. Before serving, stir the salad and garnish with fresh dill if using.

Notes

For extra crispness, lightly salt cucumbers and let them sit for 15 minutes, then drain before mixing.Use red onions for a slightly sweeter flavor and colorful presentation.Make a creamy version by stirring in ½ cup sour cream or mayonnaise.This salad tastes best after chilling for a few hours or overnight.Great served alongside grilled meats, sandwiches, or hearty casseroles.
