Description

Grasshopper Pie is a rich, no-bake dessert with a creamy mint-flavored filling and a crunchy chocolate cookie crust, perfect for mint lovers.

Ingredients

  • For the crust:
  • 1 1/2 cups chocolate cookie crumbs (such as Oreos, crushed)
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • For the filling:
  • 2 cups heavy whipping cream
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons mint extract (or peppermint extract)
  • 1/4 cup crème de menthe liqueur (optional, for extra flavor)
  • 1 cup semi-sweet chocolate chips, melted
  • 1/2 cup mini chocolate chips (for garnish, optional)

Instructions

  1. In a medium bowl, combine the chocolate cookie crumbs and granulated sugar. Stir in the melted butter until the mixture is well combined and has a moist, crumbly texture. Press the mixture evenly into the bottom and up the sides of a 9-inch pie dish. Chill for 30 minutes.
  2. In a large mixing bowl, beat the heavy whipping cream on medium-high speed until stiff peaks form. Gradually add the powdered sugar, vanilla extract, and mint extract, continuing to beat until fully combined. Gently fold in the melted chocolate chips and crème de menthe (if using).
  3. Once the crust has set, pour the mint chocolate filling into the crust, spreading it evenly. Cover with plastic wrap or foil and refrigerate for at least 4 hours, or overnight.
  4. Before serving, garnish with mini chocolate chips or shaved chocolate if desired. Slice and serve chilled.

Notes

Add crushed peppermint candies for extra mint flavor, either as a topping or mixed into the filling. For a marble effect, swirl the melted chocolate into the mint filling before refrigerating. For a vegan version, substitute coconut cream for heavy cream and use a dairy-free cookie crust. For a mocha twist, add a small amount of brewed espresso or coffee extract to the filling.
