Description
Grilled cilantro lime shrimp is a zesty, smoky, and refreshing dish made with shrimp marinated in lime, garlic, and cilantro, then grilled to perfection. It’s quick, healthy, and perfect for summer cookouts, family dinners, or easy weeknight meals.
Ingredients
- 1 1/2 lbs large shrimp, peeled and deveined
- 1/4 cup fresh lime juice
- 1 tsp lime zest
- 3 tbsp olive oil
- 3 cloves garlic, minced
- 1/4 cup fresh cilantro, chopped
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp crushed red pepper flakes (optional)
- Extra cilantro and lime wedges, for garnish
Instructions
- In a bowl, whisk together lime juice, lime zest, olive oil, garlic, cilantro, salt, black pepper, and red pepper flakes.
- Add shrimp to the marinade and toss to coat. Cover and refrigerate for 15–30 minutes.
- Preheat the grill to medium-high heat and lightly oil the grates.
- Thread shrimp onto skewers for easy grilling.
- Grill shrimp for 2–3 minutes per side, until pink, opaque, and slightly charred.
- Remove from grill and garnish with extra cilantro and a squeeze of lime before serving.
Notes
Do not marinate shrimp for more than 30 minutes, as lime juice can make them mushy.For extra spice, add cayenne pepper or chili powder to the marinade.If you don’t have a grill, use a grill pan or broil shrimp in the oven.Serve in tacos, over rice, or alongside grilled veggies for a complete meal.Store leftovers in the fridge for up to 3 days and reheat gently in a skillet.
