Ingredients
- 8 lamb chops (rib or loin)
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tbsp fresh rosemary or thyme, chopped
- 2 tbsp lemon juice
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- In a bowl, mix olive oil, garlic, rosemary or thyme, lemon juice, salt, and pepper.
- Rub the marinade over the lamb chops and let them marinate for at least 30 minutes or up to overnight in the refrigerator.
- Preheat a grill or grill pan over medium-high heat.
- Grill the lamb chops for 3–4 minutes per side for medium-rare, adjusting for desired doneness.
- Remove from the grill and let them rest for 5 minutes before serving.
