These Grilled Za’atar Chicken Thighs are juicy, tender, and bursting with bold Middle Eastern flavors. Marinated in a zesty blend of za’atar, lemon, and garlic, this easy grilled chicken recipe is perfect for weeknight dinners or summer cookouts.

Ingredients

  • 68 chicken thighs (bone-in or boneless)
  • 2 tbsp za’atar seasoning
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 3 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

  • In a large bowl, combine za’atar seasoning, olive oil, lemon juice, minced garlic, salt, and black pepper.
  • Add chicken thighs and coat evenly with the marinade.
  • Cover and marinate for at least 30 minutes (up to 4 hours for best flavor).
  • Preheat grill to medium-high heat and lightly oil the grates.
  • Place chicken on the grill and cook for 6–8 minutes per side, turning occasionally.
  • Cook until the internal temperature reaches 75°C (165°F).
  • Remove from grill and let rest for 5 minutes before serving.

Notes

Longer marinating enhances flavor and tenderness.Boneless thighs cook faster; bone-in stay juicier.Add yogurt to the marinade for extra tenderness. You can bake at 200°C (400°F) for 25–30 minutes if not grilling.
