Description
Ground beef and potatoes is a hearty one-skillet meal made with seasoned beef, tender potatoes, and optional vegetables or cheese—perfect for busy weeknights or a comforting family dinner.
Ingredients
- 1 lb ground beef
- 3–4 medium potatoes, diced (about 1/2-inch cubes)
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil or butter
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika (optional)
- 1/2 tsp dried thyme or Italian seasoning (optional)
- 1 bell pepper, diced (optional)
- 1/2 cup shredded cheese (optional)
- 2 tbsp chopped fresh parsley (for garnish)
Instructions
- Dice the potatoes into small, even cubes for quicker cooking.
- In a large skillet, heat olive oil or butter over medium heat. Add the diced potatoes and cook for 10–12 minutes, stirring occasionally, until golden and slightly tender. Remove from skillet and set aside.
- In the same skillet, add ground beef and chopped onion. Cook until beef is browned and onion is soft, about 7–8 minutes. Drain excess fat if needed.
- Add minced garlic, salt, pepper, paprika, and herbs. Stir and cook for 1–2 minutes until fragrant.
- Return the cooked potatoes to the skillet. Add diced bell pepper if using. Stir everything together and cook for another 5 minutes, or until potatoes are fully tender.
- If using cheese, sprinkle over the top, cover the skillet, and let it melt for 1–2 minutes.
- Garnish with fresh parsley and serve hot.
