These Ground Beef Enchiladas are a classic Tex-Mex comfort food that’s both satisfying and easy to prepare. Packed with seasoned ground beef, melted cheese, and topped with a rich enchilada sauce, they offer a delightful combination of flavors and textures.
Ingredients
- 1 lb ground beef
- 1 small onion, chopped
- 1 packet taco seasoning
- 1 cup salsa
- 1 cup chili sauce
- 8 corn tortillas
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 bunch green onions, chopped (optional for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large skillet, brown the ground beef over medium-high heat, breaking it apart as it cooks. Once browned, drain any excess fat.
- Add the chopped onion to the skillet and sauté for 3–4 minutes until softened. Stir in the taco seasoning, salsa, and chili sauce. Let it simmer for 5 minutes.
- In a greased 9×13-inch baking dish, spread half of the shredded cheddar and mozzarella cheeses. Spoon the ground beef mixture over the cheese, then top with the remaining cheese.
- Place the casserole in the preheated oven and bake for 9–11 minutes, or until the cheese is melted and bubbly.
- Garnish with chopped green onions if desired and serve immediately.
