Description

These Ground Beef Enchiladas are a classic Tex-Mex comfort food that’s both satisfying and easy to prepare. Packed with seasoned ground beef, melted cheese, and topped with a rich enchilada sauce, they offer a delightful combination of flavors and textures.


Ingredients

  • 1 lb ground beef
  • 1 small onion, chopped
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 cup chili sauce
  • 8 corn tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 bunch green onions, chopped (optional for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, brown the ground beef over medium-high heat, breaking it apart as it cooks. Once browned, drain any excess fat.
  3. Add the chopped onion to the skillet and sauté for 3–4 minutes until softened. Stir in the taco seasoning, salsa, and chili sauce. Let it simmer for 5 minutes.
  4. In a greased 9×13-inch baking dish, spread half of the shredded cheddar and mozzarella cheeses. Spoon the ground beef mixture over the cheese, then top with the remaining cheese.
  5. Place the casserole in the preheated oven and bake for 9–11 minutes, or until the cheese is melted and bubbly.
  6. Garnish with chopped green onions if desired and serve immediately.
