Ingredients
- 1 lb ground chicken
- 1 large egg
- 1/2 cup bread crumbs
- 2 cloves garlic, minced
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow onion, sliced
Instructions
- In a large bowl, combine ground chicken, egg, bread crumbs, minced garlic, onion powder, Italian seasoning, salt, and pepper. Mix until just combined.
- Form the mixture into meatballs about 1 to 1 1/2 inches in diameter.
- Heat olive oil in a large skillet over medium heat.
- Add meatballs and cook for 8–10 minutes, turning occasionally, until browned on all sides and cooked through (165°F internal temperature). Remove from skillet and set aside.
- In the same skillet, add sliced red and green bell peppers and onion. Sauté for 5–7 minutes until softened and slightly caramelized.
- Return meatballs to the skillet, toss with peppers and onions, and cook for 1–2 minutes to blend flavors.
- Serve hot as is, over rice, pasta, or in a sandwich roll.
