Description

Juicy ground chicken meatballs paired with tender sautéed peppers and onions for a colorful, flavorful, and protein-rich dish perfect for weeknight dinners or meal prep.


Ingredients

  • 1 lb ground chicken
  • 1 large egg
  • 1/2 cup bread crumbs
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow onion, sliced

Instructions

  1. In a large bowl, combine ground chicken, egg, bread crumbs, minced garlic, onion powder, Italian seasoning, salt, and pepper. Mix until just combined.
  2. Form the mixture into meatballs about 1 to 1 1/2 inches in diameter.
  3. Heat olive oil in a large skillet over medium heat.
  4. Add meatballs and cook for 8–10 minutes, turning occasionally, until browned on all sides and cooked through (165°F internal temperature). Remove from skillet and set aside.
  5. In the same skillet, add sliced red and green bell peppers and onion. Sauté for 5–7 minutes until softened and slightly caramelized.
  6. Return meatballs to the skillet, toss with peppers and onions, and cook for 1–2 minutes to blend flavors.
  7. Serve hot as is, over rice, pasta, or in a sandwich roll.

Notes

Bake meatballs at 400°F for 15–18 minutes instead of pan-frying if preferred.Use ground turkey as an alternative to chicken.Mix in fresh herbs like parsley or basil for added flavor.Add red pepper flakes for heat or cheese for richness.For gluten-free, use gluten-free bread crumbs and seasonings.
