Instructions

Activate the yeast:
In a large mixing bowl, combine warm milk, honey, and yeast. Let sit for 5–10 minutes until foamy. -
Add wet ingredients:
Stir in olive oil (or melted butter), egg, cinnamon, and salt until well combined. -
Form the dough:
Gradually add the whole wheat flour and all-purpose flour, mixing until a soft dough forms. -
Knead the dough:
Turn the dough onto a lightly floured surface and knead for 8–10 minutes until smooth and elastic. -
Add raisins:
Gently knead the raisins into the dough until evenly distributed. -
First rise:
Place the dough in a lightly greased bowl, cover with a clean towel, and let rise in a warm place for about 1 hour or until doubled in size. -
Shape the loaf:
Punch down the dough and shape it into a loaf. -
Second rise:
Place the dough in a greased 9×5-inch loaf pan. Cover and allow it to rise for 30–40 minutes until slightly above the edge of the pan. -
Bake:
Preheat the oven to 350°F (175°C). Bake the bread for 30–35 minutes until golden brown and cooked through. - Cool:
Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
