Description

These Healthy Vegan Almond Joy Bars are a no-bake, dairy-free dessert made with coconut, almonds, and rich dark chocolate. Naturally sweetened and easy to prepare, these vegan almond joy bars are a wholesome treat perfect for snacks or healthy indulgence.


Ingredients

For the coconut layer:

  • 2 cups shredded coconut (unsweetened)
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup or agave syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt

For the topping:

  • 1/3 cup whole almonds

For the chocolate coating:

  • 200 g dark chocolate (dairy-free)
  • 1 tablespoon coconut oil (optional)

Instructions

  1. Line a baking dish with parchment paper.
  2. In a bowl, mix together the shredded coconut, melted coconut oil, maple syrup, vanilla extract, and salt until well combined.
  3. Press the mixture firmly into the prepared dish to form an even layer.
  4. Place whole almonds evenly on top, pressing them slightly into the coconut mixture.
  5. Freeze for 20 to 30 minutes, or until firm.
  6. Melt the dark chocolate with coconut oil until smooth.
  7. Remove the chilled mixture and cut into bar shapes.
  8. Dip each bar into the melted chocolate or pour the chocolate over them to coat completely.
  9. Place the bars on parchment paper and refrigerate until the chocolate is set.
  10. Serve chilled or slightly softened at room temperature.
