These Healthy Vegan Almond Joy Bars are a no-bake, dairy-free dessert made with coconut, almonds, and rich dark chocolate. Naturally sweetened and easy to prepare, these vegan almond joy bars are a wholesome treat perfect for snacks or healthy indulgence.
Ingredients
For the coconut layer:
- 2 cups shredded coconut (unsweetened)
- 1/4 cup coconut oil, melted
- 1/4 cup maple syrup or agave syrup
- 1 teaspoon vanilla extract
- Pinch of salt
For the topping:
- 1/3 cup whole almonds
For the chocolate coating:
- 200 g dark chocolate (dairy-free)
- 1 tablespoon coconut oil (optional)
Instructions
- Line a baking dish with parchment paper.
- In a bowl, mix together the shredded coconut, melted coconut oil, maple syrup, vanilla extract, and salt until well combined.
- Press the mixture firmly into the prepared dish to form an even layer.
- Place whole almonds evenly on top, pressing them slightly into the coconut mixture.
- Freeze for 20 to 30 minutes, or until firm.
- Melt the dark chocolate with coconut oil until smooth.
- Remove the chilled mixture and cut into bar shapes.
- Dip each bar into the melted chocolate or pour the chocolate over them to coat completely.
- Place the bars on parchment paper and refrigerate until the chocolate is set.
- Serve chilled or slightly softened at room temperature.
