Ingredients
- 2 chicken breasts or thighs, cut into bite-sized pieces
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 onion, diced
- 3 garlic cloves, minced
- 2 potatoes, diced
- 1 cup green beans, trimmed and cut
- 1 cup peas or corn
- 6 cups chicken broth
- 1 tablespoon olive oil
- 1 bay leaf
- 1 teaspoon dried thyme
- Fresh parsley, chopped (for garnish)
- Salt and pepper, to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion, carrots, and celery. Sauté until vegetables are softened, about 5 minutes.
- Stir in minced garlic and cook until fragrant, about 1 minute.
- Add chicken pieces and season with salt, pepper, and dried thyme.
- Pour in the chicken broth and add diced potatoes and bay leaf. Bring to a boil.
- Reduce heat to low, cover, and simmer for 25–30 minutes, or until chicken is cooked and vegetables are tender.
- Add green beans and peas or corn. Simmer for another 5–7 minutes.
- Remove bay leaf. Adjust seasoning if needed and garnish with chopped fresh parsley before serving.
