Festive, refreshing, and naturally fruity, these homemade bomb pops feature red, white, and blue layers of strawberry, coconut, and blueberry. A healthier twist on the nostalgic frozen treat, they’re perfect for hot summer days or patriotic celebrations.
Ingredients
- 1 cup strawberry puree or strawberry juice (for red layer)
- 3/4 cup coconut milk or lemonade (for white layer)
- 1 cup blueberry puree or blueberry juice/blue sports drink (for blue layer)
- 1–2 tbsp honey or maple syrup (optional, for sweetness)
Instructions
- Prepare popsicle molds and sticks.
- Red layer: Blend strawberries into a puree (sweeten if needed). Pour into molds, filling 1/3 of each. Freeze 30–45 minutes until partially firm.
- White layer: Stir chilled coconut milk or lemonade. Pour gently over red layer to avoid mixing. Freeze 30–45 minutes until partially set.
- Blue layer: Blend blueberries into a puree or use blueberry juice. Pour to fill molds. Insert sticks and freeze at least 4 hours or overnight until solid.
- To serve, run molds briefly under warm water to release the pops.
