Ingredients

For the cookies:

  • 1 1/2 cups all-purpose flour

  • 1/2 cup unsweetened cocoa powder

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1/2 cup unsalted butter, softened

  • 1 cup granulated sugar

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 1/4 cup whole milk

For the fudge filling:

  • 1/2 cup heavy cream

  • 1/2 cup semisweet chocolate chips

  • 2 tablespoons unsalted butter

  • 1 teaspoon vanilla extract

For the chocolate coating:

  • 1 1/2 cups semisweet chocolate chips

  • 2 tablespoons vegetable oil (or coconut oil for a smooth finish

Instructions

  • Make the cookies:
    Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone mats.

    In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt. Set aside.

    In a large bowl, cream together softened butter and granulated sugar until light and fluffy (3-4 minutes). Add egg and vanilla extract, and mix until fully incorporated. Gradually add the dry ingredients alternating with milk, mixing until smooth.

  • Shape and bake the cookies:
    Scoop tablespoon-sized portions of dough and place them on the prepared baking sheets, spacing about 2 inches apart. Flatten each dough ball slightly with the back of a spoon.

    Bake for 8-10 minutes, or until the edges are set but the centers are still soft. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

  • Prepare the fudge filling:
    In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat and stir in the chocolate chips and butter until smooth. Stir in vanilla extract. Let it cool to room temperature to thicken.

  • Assemble the fudge rounds:
    Once the cookies are completely cooled, spread a generous amount of the fudge filling on the bottom of one cookie. Place another cookie on top to create a sandwich. Repeat with the remaining cookies and filling.

  • Prepare the chocolate coating:
    In a heatproof bowl, melt the semisweet chocolate chips and vegetable oil together over a double boiler or in the microwave (stir every 20 seconds until smooth).

    Dip each assembled fudge round into the melted chocolate, covering the entire cookie. Use a fork to lift the cookie out of the chocolate, allowing excess to drip off.

  • Set the coating:
    Place the coated fudge rounds on a parchment-lined baking sheet. Allow them to set at room temperature for about 30 minutes or refrigerate to speed up the process.
