Description

Homemade taquitos are crispy, rolled tortillas filled with seasoned meat, cheese, or beans, then baked or fried to golden perfection. Perfect as a snack, appetizer, or full meal, they’re crunchy on the outside and bursting with flavor inside.


Ingredients

  • 12 corn or flour tortillas
  • 2 cups shredded cooked chicken, beef, or beans
  • 1 cup shredded cheese (cheddar, Monterey Jack, or blend)
  • 1/4 cup onion, finely minced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil or vegetable oil (plus more for brushing or frying)
  • 1 tbsp taco seasoning (or a mix of cumin, chili powder, paprika)
  • Salt and pepper to taste
  • Optional: 1/4 cup salsa, diced green chilies, or chopped jalapeños

Instructions

  1. Preheat oven to 425°F (220°C), or heat oil in a skillet for frying.
  2. In a bowl, mix shredded meat or beans, cheese, onion, garlic, taco seasoning, and optional salsa or chilies.
  3. Warm tortillas in a microwave or skillet until pliable.
  4. Spoon 2–3 tablespoons of filling along one edge of each tortilla.
  5. Roll tightly and place seam-side down on a baking sheet or set aside for frying.
  6. For baking: Brush taquitos with oil and bake for 15–20 minutes until crisp and golden.
  7. For frying: Heat 1/2 inch of oil in a skillet and fry taquitos seam-side down until golden, about 2–3 minutes per side. Drain on paper towels.
  8. Serve warm with salsa, sour cream, or guacamole.

Notes

Prevent cracking by warming tortillas before rolling.To make vegetarian, use beans or mashed sweet potatoes.Make ahead and freeze before baking for a quick meal later.Air fry at 400°F (200°C) for 8–10 minutes until crisp.Leftovers reheat best in the oven or air fryer to maintain crispness.
