Description

Impossible Chicken Pie is a comforting and easy one-dish meal made with shredded chicken, vegetables, and a magic Bisquick batter that forms its own crust as it bakes.


Ingredients

  • 2 cups cooked and shredded chicken
  • 1 cup mixed vegetables (frozen or cooked fresh)
  • 1 small onion, chopped
  • 1 cup milk
  • 1/2 cup Bisquick baking mix
  • 2 eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1/2 cup shredded cheese (cheddar or mozzarella)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Grease a 9-inch pie dish or 8×8-inch baking dish.
  3. Evenly spread the shredded chicken in the bottom of the dish.
  4. Top with chopped onion and mixed vegetables.
  5. In a bowl, whisk together eggs, milk, Bisquick, salt, and pepper until smooth.
  6. Pour the batter evenly over the chicken and vegetables.
  7. Sprinkle with cheese if using.
  8. Bake for 30–35 minutes, until golden brown and the center is set.
  9. Let cool for a few minutes before slicing and serving.
