Impossible Chicken Pie is a comforting and easy one-dish meal made with shredded chicken, vegetables, and a magic Bisquick batter that forms its own crust as it bakes.
Ingredients
- 2 cups cooked and shredded chicken
- 1 cup mixed vegetables (frozen or cooked fresh)
- 1 small onion, chopped
- 1 cup milk
- 1/2 cup Bisquick baking mix
- 2 eggs
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: 1/2 cup shredded cheese (cheddar or mozzarella)
Instructions
- Preheat the oven to 400°F (200°C).
- Grease a 9-inch pie dish or 8×8-inch baking dish.
- Evenly spread the shredded chicken in the bottom of the dish.
- Top with chopped onion and mixed vegetables.
- In a bowl, whisk together eggs, milk, Bisquick, salt, and pepper until smooth.
- Pour the batter evenly over the chicken and vegetables.
- Sprinkle with cheese if using.
- Bake for 30–35 minutes, until golden brown and the center is set.
- Let cool for a few minutes before slicing and serving.
