Ingredients
- 2 medium potatoes, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 onion, chopped
- 1 leek, sliced (white and light green parts)
- 2 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 2 tablespoons butter or oil
- Salt, to taste
- Black pepper, to taste

Instructions
- Heat butter or oil in a large pot over medium heat.
- Add onion, leeks, carrots, and celery. Cook until softened.
- Stir in garlic and cook for about 1 minute until fragrant.
- Add diced potatoes and pour in the broth.
- Bring to a boil, then reduce heat and simmer for 25–30 minutes until vegetables are tender.
- Season with salt and black pepper to taste.
