Description

Ingredients

  • 2 medium potatoes, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 onion, chopped
  • 1 leek, sliced (white and light green parts)
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 2 tablespoons butter or oil
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons fresh parsley or 1 teaspoon thyme (optional)

Instructions

  • Heat butter or oil in a large pot over medium heat.
  • Add onion, leeks, carrots, and celery. Cook until softened.
  • Stir in garlic and cook for about 1 minute until fragrant.
  • Add diced potatoes and pour in the broth.

  • Season with salt and black pepper to taste.
