Description

Keto peanut butter pinwheels are an easy, no-bake low-carb dessert made with a creamy peanut butter filling rolled into a sugar-free cream cheese dough. They’re rich, satisfying, and perfect for snacks, meal prep, or holiday platters.


Ingredients

  • 4 oz cream cheese, softened
  • 2 tbsp butter, softened
  • 1/3 cup powdered erythritol (or other keto-friendly sweetener)
  • 1/2 tsp vanilla extract
  • 12 tbsp coconut flour or almond flour (as needed for texture)
  • 1/2 cup unsweetened peanut butter

Instructions

  1. In a mixing bowl, beat softened cream cheese and butter together until smooth.
  2. Add powdered erythritol and vanilla extract, mixing until well combined. If mixture is too soft, mix in coconut or almond flour until dough-like.
  3. Place dough between two sheets of parchment paper and roll into a rectangle about 1/4 inch thick.
  4. Refrigerate for 20–30 minutes to firm up.
  5. Spread peanut butter evenly over the chilled dough.
  6. Using the parchment paper to guide, roll tightly into a log.
  7. Wrap in parchment paper or plastic wrap and refrigerate at least 1 hour.
  8. Slice into pinwheels and serve chilled.
