Keto peanut butter pinwheels are an easy, no-bake low-carb dessert made with a creamy peanut butter filling rolled into a sugar-free cream cheese dough. They’re rich, satisfying, and perfect for snacks, meal prep, or holiday platters.
Ingredients
- 4 oz cream cheese, softened
- 2 tbsp butter, softened
- 1/3 cup powdered erythritol (or other keto-friendly sweetener)
- 1/2 tsp vanilla extract
- 1–2 tbsp coconut flour or almond flour (as needed for texture)
- 1/2 cup unsweetened peanut butter
Instructions
- In a mixing bowl, beat softened cream cheese and butter together until smooth.
- Add powdered erythritol and vanilla extract, mixing until well combined. If mixture is too soft, mix in coconut or almond flour until dough-like.
- Place dough between two sheets of parchment paper and roll into a rectangle about 1/4 inch thick.
- Refrigerate for 20–30 minutes to firm up.
- Spread peanut butter evenly over the chilled dough.
- Using the parchment paper to guide, roll tightly into a log.
- Wrap in parchment paper or plastic wrap and refrigerate at least 1 hour.
- Slice into pinwheels and serve chilled.
