Description
Kiwi Mojito Popsicles are refreshing frozen treats that combine sweet kiwi, tangy lime, and cooling mint for a vibrant and uplifting flavor, perfect for warm days or parties.
Ingredients
- 4 ripe kiwis, peeled and chopped
- 1/4 cup fresh lime juice
- 2 tablespoons honey or simple syrup
- 1 tablespoon lime zest
- 8–10 fresh mint leaves
- 1/2 cup coconut water or cold water
- Optional: 2 tablespoons white rum
Instructions
- Add the chopped kiwis, lime juice, honey (or simple syrup), lime zest, mint leaves, and coconut water to a blender.
- Blend until smooth. Taste and adjust sweetness if needed.
- If using rum, stir it into the blended mixture.
- Pour the mixture evenly into popsicle molds.
- Insert popsicle sticks and freeze for at least 4–6 hours, or until fully solid.
- To release, run warm water over the outside of the molds for a few seconds and gently pull the popsicles out.
