Leftover Turkey Soup is a cozy and hearty way to repurpose holiday leftovers. Loaded with tender turkey, fresh vegetables, herbs, and savory broth, this simple soup is warming, nourishing, and perfect for chilly days.
Ingredients
- 2 tablespoons olive oil or butter
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 3 carrots, sliced
- 2 celery stalks, sliced
- 2 medium potatoes, diced (optional)
- 8 cups chicken or turkey broth
- 2 bay leaves
- 1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
- 2–3 cups cooked turkey, shredded or chopped
- Salt and pepper, to taste
- 1 cup cooked rice, pasta, or noodles (optional)
- Fresh parsley, chopped, for garnish
Instructions
- Heat olive oil or butter in a large pot over medium heat.
- Sauté onion, garlic, carrots, and celery for 5–7 minutes until softened.
- Add potatoes, if using, and stir to combine.
- Pour in broth and add bay leaves and thyme. Bring to a boil.
- Reduce heat and simmer for 15–20 minutes until vegetables are tender.
- Add the cooked turkey and simmer for another 5–10 minutes until heated through.
- Season with salt and pepper to taste.
- If using cooked rice or pasta, stir it in during the last few minutes of cooking.
- Remove bay leaves, garnish with parsley, and serve hot.
