Ingredients
- 1½ cups all-purpose flour
- ½ cup finely ground pistachios
- 1½ teaspoons baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tablespoon lemon zest
- 3 tablespoons fresh lemon juice
- 1 teaspoon vanilla extract
- ½ cup milk or yogurt
Optional Glaze:
- 1 cup powdered sugar
- 2–3 tablespoons lemon juice
Instructions
- Preheat oven to 350°F (175°C) and grease and line an 8-inch cake pan.
- In a bowl, whisk together flour, ground pistachios, baking powder, baking soda, and salt.
- In another bowl, cream butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- Stir in lemon zest, lemon juice, and vanilla extract.
- Gradually add dry ingredients, alternating with milk or yogurt, mixing until just combined.
- Pour batter into prepared pan and smooth the top.
- Bake for 30–40 minutes, until a toothpick inserted comes out clean.
- Let cake cool completely.
Optional Glaze:
10. Mix powdered sugar with lemon juice until smooth.
11. Drizzle over cooled cake before serving.
