Description

Marry Me Chicken Pasta is a rich and creamy pasta dish featuring tender chicken, sun-dried tomatoes, and garlic in a luscious parmesan cream sauce. It’s flavorful, comforting, and perfect for date night or a cozy dinner at home.


Ingredients

  • 2 boneless, skinless chicken breasts
  • Salt, to taste
  • Black pepper, to taste
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes in oil, chopped
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1 tsp Italian seasoning
  • 1/4 tsp red pepper flakes (optional)
  • 2 tbsp fresh basil or parsley, chopped (for garnish)
  • 8 oz pasta (penne, fettuccine, or rigatoni)

Instructions

  1. Cook pasta according to package instructions until al dente. Drain and set aside.
  2. Season chicken with salt and pepper on both sides.
  3. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4–5 minutes per side until golden and cooked through. Remove from skillet and set aside.
  4. In the same skillet, sauté garlic for 30 seconds until fragrant. Add chopped sun-dried tomatoes and cook for 1 minute.
  5. Pour in chicken broth and bring to a simmer, scraping up browned bits from the pan.
  6. Stir in heavy cream, parmesan cheese, Italian seasoning, and red pepper flakes if using. Simmer for 3–5 minutes until the sauce thickens slightly.
  7. Slice the cooked chicken and return it to the skillet along with the cooked pasta. Toss everything together until evenly coated and heated through.
  8. Garnish with chopped fresh basil or parsley and serve hot.

Notes

For extra richness, add a spoonful of cream cheese or mozzarella to the sauce.Spinach, mushrooms, or peas make great veggie additions to this dish.Use half-and-half or whole milk with a bit of cream cheese if you don’t have heavy cream.Boneless chicken thighs can be used instead of chicken breasts for juicier results.Reheat gently with a splash of cream or broth to revive the sauce.
