Description

A vibrant and flavorful Mediterranean Chicken Gyro made with marinated grilled chicken, fresh vegetables, and creamy tzatziki sauce wrapped in warm pita bread. Perfect for lunch, dinner, or meal prep.

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs or breasts
  • 1/2 cup plain Greek yogurt
  • 2 tbsp fresh lemon juice
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and black pepper to taste
  • 4 warm pita breads or flatbreads
  • 1 cup fresh tomatoes, diced or sliced
  • 1/2 cucumber, thinly sliced or diced
  • 1/4 red onion, thinly sliced
  • 1 cup shredded lettuce (optional)
  • 1 cup tzatziki sauce

Instructions

  1. In a large bowl, combine Greek yogurt, lemon juice, olive oil, minced garlic, oregano, cumin, smoked paprika, salt, and pepper. Add chicken and coat evenly. Cover and marinate for at least 1 hour or overnight in the refrigerator.
  2. Preheat a grill, grill pan, or skillet over medium-high heat. Remove chicken from marinade and cook for 5–7 minutes per side until fully cooked and nicely charred. Let rest for a few minutes, then slice into strips.
  3. Warm the pita bread in a dry skillet or microwave.
  4. Assemble the gyros by layering sliced chicken, tomatoes, cucumber, red onion, lettuce (if using), and tzatziki sauce on the pita bread.
  5. Fold the pita around the fillings and serve immediately.

Notes

For best flavor, marinate the chicken overnight. You can substitute chicken with grilled tofu or falafel for a vegetarian version.Store components separately for fresher leftovers.Use store-bought tzatziki for convenience.Add hummus or harissa for extra flavor.
