Description
A vibrant and flavorful Mediterranean Chicken Gyro made with marinated grilled chicken, fresh vegetables, and creamy tzatziki sauce wrapped in warm pita bread. Perfect for lunch, dinner, or meal prep.
Ingredients
- 1.5 lbs boneless, skinless chicken thighs or breasts
- 1/2 cup plain Greek yogurt
- 2 tbsp fresh lemon juice
- 2 tbsp olive oil
- 3 garlic cloves, minced
- 1 tsp dried oregano
- 1 tsp ground cumin
- 1 tsp smoked paprika
- Salt and black pepper to taste
- 4 warm pita breads or flatbreads
- 1 cup fresh tomatoes, diced or sliced
- 1/2 cucumber, thinly sliced or diced
- 1/4 red onion, thinly sliced
- 1 cup shredded lettuce (optional)
- 1 cup tzatziki sauce
Instructions
- In a large bowl, combine Greek yogurt, lemon juice, olive oil, minced garlic, oregano, cumin, smoked paprika, salt, and pepper. Add chicken and coat evenly. Cover and marinate for at least 1 hour or overnight in the refrigerator.
- Preheat a grill, grill pan, or skillet over medium-high heat. Remove chicken from marinade and cook for 5–7 minutes per side until fully cooked and nicely charred. Let rest for a few minutes, then slice into strips.
- Warm the pita bread in a dry skillet or microwave.
- Assemble the gyros by layering sliced chicken, tomatoes, cucumber, red onion, lettuce (if using), and tzatziki sauce on the pita bread.
- Fold the pita around the fillings and serve immediately.
Notes
For best flavor, marinate the chicken overnight.You can substitute chicken with grilled tofu or falafel for a vegetarian version.Store components separately for fresher leftovers.Use store-bought tzatziki for convenience.Add hummus or harissa for extra flavor.
