Ingredients
- 2 cups cooked chicken breast, cubed or shredded
- 12 oz pasta (penne, rotini, or bowties)
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 cup Kalamata olives, pitted and sliced
- 1/4 cup red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup olive oil
- 3 tbsp red wine vinegar or lemon juice
- 2 cloves garlic, minced
- 1 tsp dried oregano
- Salt and black pepper, to taste
- Fresh parsley or basil, for garnish
Instructions
- Cook pasta according to package directions. Drain, rinse under cold water, and let cool.
- In a large bowl, combine the pasta, chicken, tomatoes, cucumber, olives, red onion, and feta.
- In a small bowl or jar, whisk together olive oil, red wine vinegar (or lemon juice), garlic, oregano, salt, and pepper.
- Pour the dressing over the pasta salad and toss gently to combine.
- Garnish with fresh parsley or basil.
- Chill for at least 30 minutes before serving to allow flavors to develop.
