This Mexican Pizza is a crispy, cheesy, and flavor-packed dish made with tortillas layered with seasoned meat (or beans), salsa, melty cheese, and fresh toppings. It’s a fun and easy meal for pizza night or a crowd-pleasing appetizer.
Ingredients
- 4 small flour tortillas (or corn tortillas for gluten-free)
- 1 lb ground beef or chicken (or beans for vegetarian)
- 1 packet taco seasoning (or homemade seasoning)
- 1/2 cup refried beans (optional)
- 1 1/2 cups shredded Mexican cheese blend (or cheddar + Monterey Jack)
- 1/2 cup salsa or taco sauce
- 1/2 cup sour cream (optional, for topping)
- 1/2 cup green onions, chopped
- 1/2 cup black olives, sliced (optional)
- 1/2 cup diced tomatoes
- 1/4 cup cilantro, chopped
- 1/4 cup sliced jalapeños (optional)
- Olive oil, for frying
Instructions
- Cook ground beef or chicken in a skillet until browned. Drain excess fat. Add taco seasoning and water per package directions; simmer 5 minutes. Set aside.
- Heat olive oil in skillet and fry tortillas one at a time until golden and crispy, 1-2 minutes per side. Drain on paper towels.
- Preheat oven to 400°F (200°C).
- If using refried beans, spread a thin layer onto two tortillas. Top with seasoned meat, salsa, and shredded cheese. Place another tortilla on top of each to form a sandwich.
- Place pizzas on baking sheet and bake 5-7 minutes, until cheese melts and tortillas are crisp. Bake 2-3 minutes longer if you prefer extra crispy.
- Top with diced tomatoes, olives, green onions, jalapeños, cilantro, and optional sour cream or extra salsa.
- Slice into wedges and serve hot with guacamole or chips.
