Description

Mexican Street Corn, or “Elote,” is a savory and flavorful grilled treat slathered in a creamy, tangy dressing, topped with cheese, chili powder, and fresh cilantro. Ingredients

  • 4 ears of corn, husked

  • ½ cup mayonnaise

  • ¼ cup sour cream

  • 1 tablespoon fresh lime juice

  • 1 teaspoon chili powder (plus extra for garnish)

  • ½ teaspoon garlic powder

  • ½ teaspoon salt

  • ½ cup cotija cheese, crumbled (or Parmesan cheese as a substitute)

  • Fresh cilantro, chopped (optional for garnish)

  • 1 lime, cut into wedges (for serving)

Instructions

  • Preheat your grill to medium-high heat.

  • Grill the corn for 8-10 minutes, turning occasionally, until it’s charred and tender. Alternatively, you can use a stovetop grill pan.

  • In a small bowl, mix the mayonnaise, sour cream, lime juice, chili powder, garlic powder, and salt until smooth.

  • Once the corn is grilled, remove it from the heat and coat each ear of corn generously with the creamy sauce.
