Ingredients
- 1 can (14 oz / 396 g) sweetened condensed milk
- 2 tbsp lemon juice
- 1 can (8 oz / 225 g) crushed pineapple, well drained
- 1/2 cup maraschino cherries, chopped and drained
- 1/2 cup sweetened shredded coconut
- 1/2 cup chopped pecans or walnuts
- 1 container (8 oz / 225 g) whipped topping (such as Cool Whip), thawed
- 1 prepared graham cracker pie crust (9-inch)
- Optional toppings: extra whipped topping, cherries, chopped nuts
Instructions
- In a large mixing bowl, combine the sweetened condensed milk and lemon juice. Stir until smooth and slightly thickened.
- Add the drained crushed pineapple, chopped cherries, shredded coconut, and nuts. Mix gently to combine.
- Fold in the whipped topping until the mixture is fluffy and well combined.
- Spoon the filling into the graham cracker crust, spreading it evenly with a spatula.
- Refrigerate for at least 4 hours, or until the pie is well set. Overnight chilling yields the best results.
- Before serving, optionally top with extra whipped topping, cherries, or a sprinkle of nuts.
