Ingredients
- 1 cup of old-fashioned rolled oats
- 1/2 cup of peanut butter (or any nut butter of your choice)
- 1/4 cup of honey or maple syrup
- 1/4 cup of milk (dairy or non-dairy)
- 1/2 teaspoon of vanilla extract
- 1/4 teaspoon of cinnamon (optional)
- 1/4 cup of mini chocolate chips (optional)
- 1/4 cup of dried fruit, such as raisins or cranberries (optional)
- A pinch of salt
Instructions
- In a medium-sized bowl, combine the oats, peanut butter, honey, milk, vanilla extract, cinnamon, and a pinch of salt.
- Stir the mixture until all ingredients are well incorporated and the oats are evenly coated.
- If desired, fold in mini chocolate chips or dried fruit for added flavor.
- Scoop spoonfuls of the mixture onto a parchment-lined baking sheet or plate, shaping them into cookie-sized rounds.
- Refrigerate the cookies for at least 30 minutes to allow them to set and firm up.
- Once set, remove the cookies from the fridge and enjoy! Store any leftovers in an airtight container in the refrigerator for up to 1 week.
