Description

No-Bake Pecan Pie Bites are naturally sweet, chewy, and nutty treats that capture the essence of pecan pie without any baking. Made with dates, pecans, and warm spices, they’re a healthy, quick snack perfect for holidays or everyday indulgence.


Ingredients

  • 1 cup Medjool dates, pitted
  • 1 cup raw pecans
  • 1/4 cup almond flour or finely ground almonds
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon sea salt
  • Optional: 1–2 teaspoons maple syrup or honey (for extra sweetness)
  • Optional: crushed pecans for rolling or topping

Instructions

  1. In a food processor, combine pitted dates and raw pecans. Process until finely chopped and the mixture starts to stick together.
  2. Add almond flour, vanilla extract, cinnamon, and sea salt. Process again until fully combined. If too dry, add a small drizzle of maple syrup or 1 teaspoon of water.
  3. Scoop out tablespoon-sized portions and roll into balls using your hands.
  4. Optional: Roll each ball in crushed pecans for extra texture.
  5. Place on a parchment-lined tray and chill in the refrigerator for at least 30 minutes to firm up.
  6. Store in an airtight container in the fridge or freezer.
