These Oatmeal Chocolate Chip Bars are chewy, soft, and filled with rich chocolate chips and brown sugar flavor. They’re easy to make with pantry staples and perfect for snacks, lunchboxes, or dessert tables.
Ingredients
- 2 cups old-fashioned rolled oats
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 1/2 cups semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper or lightly grease it.
- In a medium bowl, whisk together the oats, flour, baking soda, salt, and cinnamon. Set aside.
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, followed by the vanilla extract.
- Gradually mix in the dry ingredients until just combined.
- Fold in the chocolate chips.
- Spread the dough evenly in the prepared baking dish and smooth the top.
- Bake for 25–30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean or with a few moist crumbs.
- Allow the bars to cool completely in the pan before cutting into squares.
