Description

Ingredients

  • 4 chicken breasts or thighs
  • 1 tablespoon olive oil or coconut oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 cup full-fat coconut milk
  • 1/2 cup chicken broth
  • 2 tablespoons fresh lime juice
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Heat oil in a large skillet over medium heat.
  2. Season chicken with salt, pepper, cumin, and paprika.
  3. Sear the chicken on both sides until golden brown, then remove and set aside.
  4. In the same pan, sauté the diced onion and minced garlic until fragrant and translucent.
  5. Pour in the chicken broth and coconut milk, stirring to combine.
  6. Add fresh lime juice and return the seared chicken to the pan.
  7. Simmer on low heat for about 15–20 minutes, or until the chicken is fully cooked and the sauce thickens slightly.
  8. Garnish with chopped fresh cilantro and serve hot.
