Description

These oven baked chicken bites are crispy, juicy, and packed with flavor. A healthier alternative to fried nuggets, they’re easy to prepare and perfect for dinner, snacks, or meal prep.


Ingredients

  • 1.5 lbs chicken breast, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup breadcrumbs or panko (optional, for extra crunch)
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
  2. In a large bowl, toss the chicken pieces with olive oil to coat.
  3. In a small bowl, combine garlic powder, onion powder, paprika, salt, black pepper, breadcrumbs, and Parmesan cheese if using.
  4. Sprinkle the seasoning mixture over the chicken and toss until evenly coated.
  5. Spread the coated chicken bites on the prepared baking sheet in a single layer.
  6. Bake for 15–20 minutes, flipping halfway through, until chicken is cooked through and lightly golden.
  7. For extra crispiness, broil for the last 2–3 minutes, watching closely to prevent burning.
  8. Let rest for a couple of minutes before serving.
