These oven baked chicken bites are crispy, juicy, and packed with flavor. A healthier alternative to fried nuggets, they’re easy to prepare and perfect for dinner, snacks, or meal prep.
Ingredients
- 1.5 lbs chicken breast, cut into bite-sized pieces
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 cup breadcrumbs or panko (optional, for extra crunch)
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
- In a large bowl, toss the chicken pieces with olive oil to coat.
- In a small bowl, combine garlic powder, onion powder, paprika, salt, black pepper, breadcrumbs, and Parmesan cheese if using.
- Sprinkle the seasoning mixture over the chicken and toss until evenly coated.
- Spread the coated chicken bites on the prepared baking sheet in a single layer.
- Bake for 15–20 minutes, flipping halfway through, until chicken is cooked through and lightly golden.
- For extra crispiness, broil for the last 2–3 minutes, watching closely to prevent burning.
- Let rest for a couple of minutes before serving.
