Ingredients
- 4 halibut fillets (about 6 ounces each)
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon paprika
- 1 tablespoon fresh lemon juice
- 1 tablespoon fresh parsley, chopped
- Lemon wedges for serving
Instructions
- Pat the halibut fillets dry with paper towels to remove excess moisture.
- Season both sides with salt, black pepper, and paprika.
- Heat olive oil in a large skillet over medium-high heat until shimmering.
- Place the fillets in the skillet and cook for 3–4 minutes without moving them to form a golden crust.
- Carefully flip the fillets and reduce heat to medium.
- Add butter and minced garlic to the pan. As the butter melts, spoon it over the fish to baste.
- Cook for another 3–4 minutes, or until the fish is opaque and flakes easily with a fork.
- Drizzle with fresh lemon juice and sprinkle with chopped parsley before serving.
- Serve immediately with lemon wedges.
