Description

A crispy, golden-baked chicken breast coated in a flavorful mixture of Parmesan and breadcrumbs, offering a savory, cheesy crust while keeping the chicken juicy and tender. Perfect for a weeknight dinner.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 cup panko breadcrumbs (or regular breadcrumbs)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried Italian seasoning (or dried oregano/basil)
  • Salt and pepper, to taste
  • 2 large eggs
  • 2 tablespoons olive oil (for drizzling)
  • Fresh parsley (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. In a shallow dish, combine Parmesan cheese, breadcrumbs, garlic powder, onion powder, Italian seasoning, salt, and pepper. Stir until well combined.
  3. Pat the chicken breasts dry with paper towels. In a separate shallow bowl, beat the eggs. Dip each chicken breast into the egg wash, coating it evenly on both sides.
  4. Dredge the egg-coated chicken breasts in the Parmesan-breadcrumb mixture, pressing gently to ensure the coating sticks. Coat both sides thoroughly.
  5. Place the coated chicken breasts on the prepared baking sheet. Drizzle olive oil over the top of each chicken breast.
  6. Bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the crust is golden and crispy. Optionally broil for 1-2 minutes for a crispier crust.
  7. Remove from the oven and let the chicken rest for a few minutes. Garnish with fresh parsley if desired and serve with your favorite sides.

Notes

For an extra cheesy crust, mix mozzarella cheese with the Parmesan and breadcrumbs.To make it spicy, add red pepper flakes or cayenne pepper to the breadcrumbs.For a gluten-free version, use gluten-free breadcrumbs or almond flour.Add lemon zest to the breadcrumb mixture and serve with lemon juice for a refreshing twist.
