Ingredients

  • 3 large russet potatoes

  • 2 tablespoons vegetable oil or olive oil

  • 1–2 teaspoons truffle oil

  • ½ cup parmesan cheese, freshly grated

  • ½ teaspoon garlic powder

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • 2 tablespoons fresh parsley, chopped

Instructions

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

  • Wash the potatoes and peel them if desired. Cut them into thin fry-shaped strips.

  • Soak the cut potatoes in cold water for about 20 minutes to remove excess starch.

  • Drain and dry the potatoes thoroughly with paper towels.

  • Toss the fries with vegetable oil, salt, and black pepper.

  • Spread the fries in a single layer on the prepared baking sheet.

  • Bake for 25–30 minutes, turning halfway through, until the fries are golden and crispy.
