Description

Pastina Soup is a classic Italian comfort dish made with tiny star-shaped pasta in a warm, savory broth. Light, nourishing, and easy to make, it’s perfect for cold days or when you need a little comfort.


Ingredients

  • 4 cups chicken broth or vegetable broth
  • 3/4 cup pastina (tiny star-shaped pasta)
  • 1 tbsp unsalted butter
  • 1/4 cup grated Parmesan cheese
  • 1 egg (optional)
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. In a medium saucepan, bring the chicken or vegetable broth to a gentle boil.
  2. Add the pastina and cook according to package instructions, usually 5–7 minutes, stirring occasionally.
  3. Once the pastina is tender, reduce heat to low.
  4. Stir in butter and grated Parmesan cheese until melted and well combined.
  5. (Optional) Beat the egg in a small bowl, then slowly drizzle it into the soup while stirring continuously to create silky egg ribbons.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with chopped fresh parsley if desired.

Notes
