Ingredients
For the Peach Mousse:

Instructions

Prepare the Peach Puree:

If using fresh peaches, peel, pit, and chop them into chunks, then blend until smooth. If using canned peaches, drain and blend them.

Bloom the Gelatin:

In a small bowl, mix the gelatin with cold water and let it sit for 5 minutes to bloom.

Heat the Peach Puree:

Warm the peach puree in a saucepan over medium heat (don’t boil). If you desire a more intense flavor, simmer for a few minutes.

Stir in the bloomed gelatin and allow it to dissolve completely. Remove from heat and cool slightly. Add lemon juice if using.

In a separate bowl, whip the heavy cream with powdered sugar until stiff peaks form.
