Ingredients
- 3 ripe peaches, peeled and diced
- 1/2 red bell pepper, finely chopped
- 1/4 cup red onion, finely chopped
- 1 small jalapeño pepper, minced (seeded for less heat)
- 2 tablespoons fresh cilantro, chopped
- 2 tablespoons lime juice
- 1/4 teaspoon salt (or to taste)
- 1 small tomato or 1/4 cup diced cucumber (optional)
- 1 teaspoon honey or maple syrup (optional, if peaches are not sweet enough)
Instructions
- In a medium bowl, combine diced peaches, red bell pepper, red onion, and jalapeño.
- Add chopped cilantro and fresh lime juice.
- Sprinkle with salt and gently stir to combine.
- Fold in optional diced tomato, cucumber, or sweetener if using.
- Taste and adjust seasoning or acidity as needed.
- Refrigerate for 15–30 minutes before serving for best flavor.
- Serve chilled or at room temperature with chips, tacos, grilled meats, or fish.
