Ingredients
- 4 salmon fillets
- ½ cup pesto (store-bought or homemade)
- 1 cup orzo pasta
- 2 cups cherry or grape tomatoes
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt, to taste
- Black pepper, to taste

- Fresh basil
- Grated Parmesan cheese
Instructions
- Preheat oven to 200°C (400°F).
- Place salmon fillets on a lined baking sheet and season with salt and pepper.
- Spread pesto evenly over each fillet.
- Bake for 12–15 minutes, until salmon is opaque and flakes easily.
- Meanwhile, cook orzo according to package instructions. Drain and set aside.
- Heat olive oil in a skillet over medium heat. Add tomatoes and cook until blistered and softened.
- Add garlic and cook for 1 minute until fragrant.
- Stir in cooked orzo and toss with tomatoes.
- Add lemon juice, salt, and pepper to taste.
- Serve pesto salmon over the orzo mixture.
- Garnish with fresh basil and Parmesan if desired.
