Description

This Pesto Salmon with Blistered Tomato Orzo is a fresh and flavorful dinner featuring tender baked salmon topped with herby pesto, served over orzo tossed with juicy blistered tomatoes. It’s a quick, healthy, and elegant meal perfect for busy weeknights or special occasions.


Ingredients

  • 4 salmon fillets
  • ½ cup pesto (store-bought or homemade)
  • 1 cup orzo pasta
  • 2 cups cherry or grape tomatoes
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt, to taste
  • Black pepper, to taste

Optional garnish:

  • Fresh basil
  • Grated Parmesan cheese

Instructions

  • Preheat oven to 200°C (400°F).
  • Place salmon fillets on a lined baking sheet and season with salt and pepper.
  • Spread pesto evenly over each fillet.
  • Bake for 12–15 minutes, until salmon is opaque and flakes easily.
  • Meanwhile, cook orzo according to package instructions. Drain and set aside.
  • Heat olive oil in a skillet over medium heat. Add tomatoes and cook until blistered and softened.
  • Add garlic and cook for 1 minute until fragrant.
  • Stir in cooked orzo and toss with tomatoes.
  • Add lemon juice, salt, and pepper to taste.
  • Serve pesto salmon over the orzo mixture.
  • Garnish with fresh basil and Parmesan if desired.

Notes

Do not overcook salmon to keep it moist and tender.Use fresh, high-quality pesto for the best flavor.Add a splash of pasta water to loosen the orzo if needed.You can grill the salmon instead of baking for a smoky flavor.
