Ingredients
- 1 cup fresh pineapple, diced
- 1 ripe avocado, diced
- 1/4 cup red onion, finely chopped
- 1 jalapeño, seeded and minced
- 2 tablespoons fresh cilantro, chopped
- 2 tablespoons fresh lime juice
- 1/4 teaspoon salt (or to taste)
- Optional: 1/4 cup red bell pepper, diced
- Optional: 1/4 cup cucumber, diced
- Optional: 1 small garlic clove, minced
Instructions
- In a medium mixing bowl, combine the diced pineapple, avocado, red onion, jalapeño, and cilantro.
- Add the lime juice and salt, and stir gently to combine, being careful not to mash the avocado.
- Let the salsa sit for 10–15 minutes to allow the flavors to blend, or serve immediately.
- Optional: Stir in red bell pepper, cucumber, or garlic for added flavor and crunch.
Notes
Use fresh, ripe pineapple for the best flavor and texture.Add avocado just before serving to keep it from browning.Adjust the spice level by using more or less jalapeño, or adding red pepper flakes.For a milder salsa, substitute green onion for red onion.
