Description

Pollo Saltado is a vibrant and savory Peruvian stir-fry made with tender chicken, aromatic spices, and a fusion of Peruvian and Asian flavors. Stir-fried with soy sauce, vinegar, and vegetables, it’s a quick, flavorful dish perfect for any occasion, often served with French fries or rice.


Ingredients

  • 1 lb chicken breast, cut into strips
  • 1 large red onion, sliced
  • 2 tomatoes, cut into wedges
  • 1 yellow chili pepper, deseeded and finely chopped (optional for heat)
  • 2 tablespoons soy sauce
  • 1 tablespoon vinegar (preferably red wine or white vinegar)
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • French fries (for serving, optional)
  • Steamed rice (for serving, optional)

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken strips and season with salt, pepper, and cumin. Cook for 5-7 minutes, until browned and cooked through. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add the garlic and yellow chili pepper (if using). Stir-fry for 1-2 minutes until fragrant.
  3. Add the red onion and cook for 2-3 minutes until softened but still crisp.
  4. Stir in the tomato wedges and cook for another 2 minutes, just enough to warm them through without losing their shape.
  5. Return the chicken to the skillet and add the soy sauce and vinegar. Stir to combine and let cook for another 2 minutes to allow the flavors to meld.
  6. Garnish with fresh cilantro and serve hot, either with French fries or steamed rice.

Notes

Storage: Store leftover Pollo Saltado in an airtight container in the refrigerator for up to 3 days.Reheating: Reheat in a skillet over medium heat or microwave in short intervals, stirring in between.Variations: Substitute chicken with tofu for a vegetarian version, or add more vegetables like bell peppers or peas.
