Ingredients
- 1¾ cups (220g) all-purpose flour
- 1 tablespoon poppy seeds
- 2 teaspoons baking powder
- ½ teaspoon salt
- ¾ cup (150g) granulated sugar
- 3 large eggs
- ½ cup (120ml) vegetable oil
- 1 teaspoon almond extract
- 2 tablespoons lemon zest (from about 2 lemons)
- ½ cup (120ml) fresh lemon juice
- ½ cup (120ml) milk
- Optional: Sliced almonds for topping
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
- In a medium bowl, whisk together the flour, poppy seeds, baking powder, and salt.
- In a large bowl, beat the sugar and eggs until light and fluffy. Add the oil, almond extract, lemon zest, lemon juice, and milk, mixing until well combined.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
- Pour the batter into the prepared loaf pan. If desired, sprinkle sliced almonds on top for added texture.
- Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice and enjoy!
