Description

The Poppy Seed Almond Lemon Loaf is a delightful fusion of zesty lemon, nutty almond, and a subtle crunch from poppy seeds. Its moist texture and refreshing citrus flavor make it an ideal treat for breakfast, afternoon tea, or as a light dessert.


Ingredients

  • 1¾ cups (220g) all-purpose flour
  • 1 tablespoon poppy seeds
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup (150g) granulated sugar
  • 3 large eggs
  • ½ cup (120ml) vegetable oil
  • 1 teaspoon almond extract
  • 2 tablespoons lemon zest (from about 2 lemons)
  • ½ cup (120ml) fresh lemon juice
  • ½ cup (120ml) milk
  • Optional: Sliced almonds for topping

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, poppy seeds, baking powder, and salt.
  3. In a large bowl, beat the sugar and eggs until light and fluffy. Add the oil, almond extract, lemon zest, lemon juice, and milk, mixing until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
  5. Pour the batter into the prepared loaf pan. If desired, sprinkle sliced almonds on top for added texture.
  6. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice and enjoy!
