Description

Potato Pancakes are crispy on the outside and tender on the inside, made with grated potatoes, onions, and a few simple ingredients. This savory comfort food is quick to prepare and perfect as a side dish, snack, or main course.


Ingredients

  • 4 medium potatoes, peeled and grated
  • 1 small onion, grated
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Vegetable or canola oil, for frying

Instructions

  1. Peel and grate the potatoes using a box grater or food processor.
  2. Place the grated potatoes in a clean kitchen towel and squeeze out as much liquid as possible.
  3. Grate the onion and combine it with the potatoes in a large bowl.
  4. Add eggs, flour, salt, and pepper to the bowl and mix until fully combined.
  5. Heat a thin layer of oil in a large skillet over medium-high heat.
  6. Scoop about 1/4 cup of the potato mixture into the pan and flatten into a pancake shape.
  7. Fry for 3–4 minutes per side, or until golden brown and crispy.
  8. Transfer to a paper towel-lined plate to drain excess oil.
  9. Serve hot with sour cream, applesauce, or your favorite toppings.
