Description

These traditional Pryaniki Cookies are soft, honey-spiced treats popular in Eastern European baking. Ingredients

  • 2 ½ cups all-purpose flour

  • ½ cup honey

  • ½ cup granulated sugar

  • 2 eggs

  • 4 tablespoons unsalted butter

  • 1 teaspoon baking soda

  • 1 teaspoon ground cinnamon

  • ½ teaspoon ground ginger

  • ¼ teaspoon ground cloves

  • ¼ teaspoon salt

For the Glaze

  • 1 cup powdered sugar

  • 12 tablespoons lemon juice or water

Instructions

  • In a saucepan over low heat, gently warm the honey, sugar, and butter until smooth and well combined. Remove from heat and let cool slightly.

  • In a bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, and salt.

  • Add the eggs to the cooled honey mixture and mix until smooth.

  • Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms.

  • Cover the dough and refrigerate for 30 minutes to make it easier to handle.

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

  • Roll the dough into small balls and place them on the prepared baking sheet, leaving space between each.

  • Bake for 10–12 minutes, or until the cookies are lightly golden.

  • While the cookies cool slightly, prepare the glaze by mixing powdered sugar with lemon juice or water until smooth.

  • Dip or brush the warm cookies with the glaze and allow it to set before serving.
