2 cups cooked quinoa

1 large egg

1/2 cup breadcrumbs

Instructions

In a large bowl, combine the cooked quinoa, egg, breadcrumbs, grated carrot, chopped onion, minced garlic, parsley, and parmesan cheese.

Season the mixture with salt and black pepper.

Mix until well combined and the mixture holds together when pressed.

Form the mixture into 8 small patties using your hands.

Heat olive oil in a skillet over medium heat.

Place the patties in the skillet and cook for 4–5 minutes per side until golden brown and crispy.
