Description

Ranch Garlic Parmesan Chicken Skewers are a delicious and easy-to-make dish featuring tender chicken marinated in ranch dressing, garlic, and parmesan cheese. Grilled to perfection, these skewers are perfect for summer barbecues, weeknight dinners, or party appetizers.


Ingredients

  • For the chicken marinade:
    • 2 lbs boneless, skinless chicken breasts (cut into bite-sized cubes)
    • 1/4 cup ranch dressing (store-bought or homemade)
    • 1/4 cup grated parmesan cheese
    • 3 tbsp olive oil
    • 2 cloves garlic, minced
    • 1 tsp dried oregano
    • 1/2 tsp ground black pepper
    • 1/2 tsp salt
  • For the skewers:
    • 1 tbsp fresh parsley (chopped, optional, for garnish)
    • Wooden skewers or metal skewers (soaked in water if using wooden skewers)

Instructions

  1. Marinate the chicken: In a large bowl, combine ranch dressing, grated parmesan cheese, olive oil, minced garlic, oregano, salt, and pepper. Stir well. Add chicken cubes, toss to coat, and refrigerate for at least 30 minutes, or up to 2 hours.
  2. Prepare the skewers: If using wooden skewers, soak them in water for at least 20 minutes. For metal skewers, no soaking is necessary.
  3. Preheat the grill: Preheat your grill to medium-high heat (375°F-400°F). You can also cook on a stovetop grill pan or in the oven.
  4. Assemble the skewers: Thread marinated chicken pieces onto the skewers, leaving small gaps between pieces for even cooking.
  5. Grill the skewers: Place skewers on the grill and cook for 5-7 minutes per side, or until chicken reaches an internal temperature of 165°F (75°C) and is golden and slightly charred.
  6. Serve: Remove skewers from grill, garnish with parsley, and serve with ranch dipping sauce or sides like salad, grilled veggies, or rice.

Notes

Add vegetables like bell peppers, onions, or zucchini to the skewers for more flavor and nutrition.For a spicy version, sprinkle cayenne pepper or chili flakes on the chicken or drizzle with hot sauce after grilling.If you don’t have a grill, bake at 400°F for 15-20 minutes or broil for a few minutes to achieve a charred exterior.For a richer flavor, wrap small pieces  around the chicken cubes before marinating and grilling.
