Ingredients

  • 2 cups cherry or grape tomatoes

  • 1 ball burrata cheese

  • 2 tablespoons olive oil

  • 2 garlic cloves, minced or thinly sliced

  • Fresh basil leaves

  • ½ teaspoon salt (or to taste)

  • ¼ teaspoon black pepper

  • ¼ teaspoon red pepper flakes (optional)

  • 1 tablespoon balsamic glaze (optional)

  • Crusty bread, for serving

Instructions

  • Preheat your oven to 400°F (200°C).

  • Place the cherry or grape tomatoes in a baking dish or on a baking sheet.

  • Drizzle olive oil over the tomatoes and add the minced or sliced garlic.

  • Season with salt, black pepper, and red pepper flakes if desired.

  • Toss the tomatoes gently so they are evenly coated with the oil and seasoning.

  • Roast in the oven for 18–22 minutes, until the tomatoes are soft and slightly blistered.

  • Remove the tomatoes from the oven and let them cool slightly.

  • Transfer the roasted tomatoes to a serving dish and place the burrata in the center.

  • Tear the burrata slightly so the creamy center begins to spread.

  • Drizzle with additional olive oil and optional balsamic glaze.

  • Garnish with fresh basil leaves and serve immediately with crusty bread.
