Description

Ingredients

  • 46 boneless, skinless chicken breasts or thighs
  • 1 cup Russian dressing
  • 1 cup apricot preserves or jam
  • 1 packet (about 1 oz) dry onion soup mix
  • Salt, to taste
  • Black pepper, to taste
  • Optional: 1/2 teaspoon garlic powder
  • Optional: 1/2 teaspoon paprika
  • Optional: 1/4 teaspoon red pepper flakes

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Lightly grease a 9×13-inch baking dish.
  3. Arrange chicken in a single layer in the prepared dish.
  4. In a bowl, mix together Russian dressing, apricot preserves, and dry onion soup mix until well combined.
  5. Pour the sauce evenly over the chicken to coat each piece.
  6. Season with salt, pepper, and any optional spices.
  7. Bake uncovered for 45–50 minutes, or until the chicken is cooked through and the sauce is bubbly and caramelized.
