Ingredients
For the Crust

For the Filling

3 cups fresh peaches, sliced

For Finishing

1 egg (for egg wash)

Instructions

In a bowl, combine the flour, sugar, and salt.

Add the cold butter pieces and mix with a pastry cutter or fingers until the mixture resembles coarse crumbs.

Gradually add ice water, mixing just until the dough comes together.

Form the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.

Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

In a bowl, mix the sliced peaches, brown sugar, cornstarch, lemon juice, vanilla extract, and cinnamon.

Roll the chilled dough into a 12-inch circle on a lightly floured surface.

Transfer the dough to the prepared baking sheet.

Arrange the peach filling in the center, leaving about a 2-inch border.

Fold the edges of the dough over the fruit, gently pleating as you go.

Beat the egg and brush it over the crust. Sprinkle with coarse sugar if desired.
