Ingredients
- 1 pie crust (homemade or store-bought)
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 tbsp cornmeal
- 1/4 tsp salt
- 3/4 cup honey
- 1/2 cup heavy cream
- 1 tsp vanilla extract
- 1 tbsp white vinegar or lemon juice
- 3 large eggs
- Flaky sea salt, for topping
Instructions
- Preheat oven to 350°F (175°C).
- Roll out pie crust and fit into a 9-inch pie dish. Crimp edges and set aside.
- In a mixing bowl, whisk melted butter, sugar, cornmeal, and salt until smooth.
- Add honey, heavy cream, vanilla, vinegar or lemon juice, and eggs. Whisk until fully combined.
- Pour filling into prepared crust.
- Bake 45–55 minutes, until the center is just set with a slight jiggle.
- Cool completely on a wire rack, then sprinkle with flaky sea salt before serving.
Notes
Use a medium-flavored honey like wildflower or clover for balanced sweetness.For gluten-free, use a gluten-free crust.Add citrus zest or warm spices for extra flavor.
