½ teaspoon salt
-
3–4 tablespoons ice water
For the Filling
-
1 cup ricotta cheese
-
4 oz cream cheese, softened
-
2 large eggs

¼ teaspoon black pepper
-
½ cup grated parmesan cheese
For the Topping

2–3 ripe tomatoes, thinly sliced
-
¼ cup fresh basil leaves
-
1 tablespoon olive oil
- 2 tablespoons grated parmesan cheese
Instructions
-
Preheat the oven to 375°F (190°C).
-
In a bowl, combine flour and salt. Add the cold cubed butter and work it into the flour using your fingers or a pastry cutter until the mixture resembles coarse crumbs.
-
Gradually add ice water, mixing until the dough begins to come together.
-
Form the dough into a disk, wrap in plastic wrap, and chill for about 30 minutes.
-
Roll the chilled dough on a lightly floured surface and place it into a tart pan. Press gently into the edges and trim any excess.
-
Prick the bottom with a fork and bake the crust for 10 minutes to partially set it.
-
In a bowl, mix ricotta cheese, cream cheese, eggs, minced garlic, parmesan cheese, salt, and black pepper until smooth.
-
Spread the cheese mixture evenly over the pre-baked crust.
-
Arrange the sliced tomatoes neatly on top of the filling.
-
Drizzle lightly with olive oil and sprinkle extra parmesan cheese over the tomatoes.
-
Bake for 30–35 minutes until the filling is set and the crust is golden brown.
-
Allow the tart to cool slightly, then top with fresh basil leaves before serving.
- Slice and serve warm or at room temperature.
Notes
Use Roma or plum tomatoes to reduce excess moisture.Lightly salt tomato slices and let them sit for a few minutes before placing them on the tart to prevent sogginess.Pre-baking the crust helps keep the base crisp.Fresh basil adds the best flavor, but a small amount of dried basil can be used in the filling if needed. The tart can be served warm or at room temperature, making it perfect for gatherings.
