Ingredients

For the Crust

  • 1 ¼ cups all-purpose flour

  • ½ cup unsalted butter, cold and cubed

  • ½ teaspoon salt

  • 3–4 tablespoons ice water

For the Filling

  • 1 cup ricotta cheese

  • 4 oz cream cheese, softened

  • 2 large eggs

  • 2 cloves garlic, minced

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • ½ cup grated parmesan cheese

For the Topping

  • 2–3 ripe tomatoes, thinly sliced

  • ¼ cup fresh basil leaves

  • 1 tablespoon olive oil

  • 2 tablespoons grated parmesan cheese

Instructions

  • Preheat the oven to 375°F (190°C).

  • In a bowl, combine flour and salt. Add the cold cubed butter and work it into the flour using your fingers or a pastry cutter until the mixture resembles coarse crumbs.

  • Gradually add ice water, mixing until the dough begins to come together.

  • Form the dough into a disk, wrap in plastic wrap, and chill for about 30 minutes.

  • Roll the chilled dough on a lightly floured surface and place it into a tart pan. Press gently into the edges and trim any excess.

  • Prick the bottom with a fork and bake the crust for 10 minutes to partially set it.

  • In a bowl, mix ricotta cheese, cream cheese, eggs, minced garlic, parmesan cheese, salt, and black pepper until smooth.

  • Spread the cheese mixture evenly over the pre-baked crust.

  • Arrange the sliced tomatoes neatly on top of the filling.

  • Drizzle lightly with olive oil and sprinkle extra parmesan cheese over the tomatoes.

  • Bake for 30–35 minutes until the filling is set and the crust is golden brown.

  • Allow the tart to cool slightly, then top with fresh basil leaves before serving.

  • Slice and serve warm or at room temperature.
